Blueberry jam tart

材料・調味料
Double zero flour
300 g
Sugar
150 g
Butter
100 g
Salt
A pinch
Egg
1 whole
Egg
1 yolk
Jam

Mix the flour, sugar and pinch of salt in a bowl.

Cut the butter in little pieces and add it into the bowl.

Work it with the top of your fingers until you obtain a sand-like dough.

Make little hole in the middle of the dough and add one whole egg plus one yolk.

Start working the dough with your hands.
I usually start within the bowl and once it stata sticking together, I move it on a pastry board.

Keep on working the dough until it becomes uniform but not sticky and shape it like a ball.

Let it stand in the fridge for about half an hour.

While you wait for the dough to be ready, butter and flour your tart mould (mine is 24cm wide).

After 30 minutes you can take the dough out of the fridge and put it on the pastry board.

Cut one third of it and put it aside, you'll use same for the stripes

Roll the dough out until you get a circle as wide as your tart mould and place it within the mould.

Make a few holes on the base with the fork, this will help the dough to cook in a proper way.

Place the jam within the mould and level it.

Take the dough you put aside and cut as many stripes as you need in order to form the typical grill shape.

Cook the tart in a fan-assisted oven for 30 minutes or when it's browned.
ポイント

When you work the dough, please be careful not to warm it up with your hands.

If the dough breaks on the edges when you roll it out, don't worry as it's just too cold....wait a minute and then try again but be careful not to have it too warm!
