Cut all the aubergine in rings, then after cutting, sprinkle salt on them (salt helps the aubergine sweat). Chop carrot, onion and paprika. In a pan, add oil fry all the chopped vegetables for 5min.
After frying them, add the minced meat, tomato juice and water, then let it boil around 30min. After boiling add salt and pepper. Drain the aubergine’s water, then in a pan add oil and start frying aubergine on both sides.
In a pot, put 1 layer of fried aubergine, then 1 layer of the meat mixture; repeat this step until you finish aubergine and meat mixture.
After, start preparing the white sauce by mixing fresh cream, eggs and cheese. Pour the white sauce on the top of Moussaka. Bake for 60min at 180C.
Chicken good with aubergine. Beef good with potato.
