For fries. Pour olive oil in wok or heavy deep frying pan. (Be very careful with hot oil) heat oil on stove top. Slice yams or sweet potato into sticks. once the oil is hot gently! Place sweet potatoes into hot oil. They should just be covered (depending on how wide you pan is). Just enough oil to cover their tops. Let them summer on low/med heat for 5-10 minutes. Dice white onion and dice garlic and toss it in with them continue for 3-5 minutes until garlic is golden brown. Carefully remove pan and strain in sink using steel colander. Let rest for 2-3 minutes and distribute salt/1tbsp pepper/oregano mix over them. Serve on plate with chicken and cold salad.
For chicken get your pan got with olive oil (1-2 tbsp) and then place sliced chicken in smeared with honey and your favourite hot sauce. Cook until nicely seared.
Dice red onion, chop avocado, chop green onion into chunks, use red wine vinegar, and rest of ground b-pepper, mix in grated white cheese. Drizzle with olive oil. Stir salad and then topple onto plate.
