Miffy Lemon cookies

材料・調味料
lemon (peel & juice)

butter* (softened)
20g
sugar
30g
water
1 Tbs
flour
80g
almond powder

作り方

Grate lemon peel first, then mix with water, fresh squeezed juice, butter and sugar with hand mixer until smooth. Sift in flour & almond powder slowly while mixing with spatula until all powder is well blended.

Put the mixture in fridge for 30 mins to cool. Once chilled, flatten to about 4mm and use cookie cutters or shape pieces as you wish.

Heat oven to 170℃ and bake for 11-14 minutes.
Allow to cool and enjoy with your favourite drink.
ポイント

Original recipe only calls for half a lemon peel, but I prefer it tart and used grated it all.
*May use oil instead of butter.
May use tin foil to cover & prevent over browning around 10 minute mark.
