Braised Pork (Philippine signature Dish Humba) √

Pork Belly or Pork Legs

light soya sauce
2 tbsp
dark soya sauce
2 tspb
vinegar
2 tspb
palm sugar/red sugar
4 tsbp
whole pepper
1 tsp
star anise
3 pcs
garlic cloves
4 pcs
black salted peas
1 tspb
laurel leaf
2 pcs
water
5 cups
作り方

Mix all ingredients and marinate for max 30 minutes. Then heat wok and add marinated pork without the stock. Fry till brown and stir occasionally. Once turned brown, add half cup water and cover to simmer. Once water is evaporated and dried, add another cup of water.

Always add the rest of the water until tender.
ポイント

Serve with your favorite Jasmine rice while it's hot. Leftover HUMBA is also best eaten the next days. Reheat for best flavor.
