Season fish with salt and pepper and preheat a heavy pan to medium high. Meanwhile turn the broiler on and position rack to upper part of oven.
Cook fish for 2-3 minutes until just browned on first side. Thicker cuts such as halibut may require more cook time and thinner cuts such as tilapia may be less. Flip fish and after 30 seconds (longer for halibut) remove from the heat. Top with the Walnut Basil Blue Cheese Spread and place under the broiler for 30 seconds to 1 minute. Serve over risotto or mashed potatoes with a squeeze of fresh lemon.
