First I saw this from 桜央里 San ,I was immediately hooked! In Chinese cuisine,there are often bamboo shoot with ham combination,so I am sure it will go well Parma ham too! Like Italian carpaccio,I drizzled olive oil and put Parmesan cheese on it,very minimal ingredients,but it was so delicious! Also found out おちゃわんSan made a lovely version of this! Thank you both,very inspiring for me!

Hi 桜央里San ,こんにちは、はじめまして！ Thank you so much for the inspiration,I enjoyed this dish so much,I used Parma ham instead of pancetta,no need to cook,it fits the Italian's carpaccio theme! I love western dishes made with Japanese ingredients,they give me more excitement,this dish is good example of east and west go together perfectly! I knew bamboo shoot and ham are great together,Parmesan cheese is an important element of this dish too!
