Lavash breakfast Pizza

Whole Wheat Lavash
1 loaf
Tomato, diced
1/4 cup
Small diced onion
1/4 cup
1 diced can jalapeño
1 tbsp
Mozzarella
1/2 cup
Cheddar
1/2 cup
Provolone
1 slice
Breakfast Sausage 'diced'
1/2 cup
Pepperoni
8 to 10
Tomato sauce
14 oz
Pizza seasoning
.5 oz
Fresh bay leaf 'chopped'
3 leafs
Italian seasoning
.5 oz
Garlic 'chopped'
1 tbsp
Thai bird eye chilies 'crushed'
1 tsp

Dice fresh vegetables set aside.

Vegan Cheeses: Daiya Brand:

Mix cheeses, crumble slice Provolone cheese and mix with Mozzarella & Cheddar cheese.

Keep cold until use.....

Mix seasoning and herbs in tomato sauce, do not simmer.

Set in frig overnight for best results or at least four hours.

Use a pizza stone, follow manufactures recommendation. Most stones should heat with oven and cool with oven.

Heat oven to 500 degrees.

Simply spread sauce on lavash loaf. Add cheese next!!, best melt. Vegan sausages & pepperoni, layer remaining ingredients.

Optional: If you like a wood flavor try this: Polyscienceculinary.com sales The Smoking Gun, battery operated device that blows burn wood chips into vessels for added wood flavor without smoking up or burning down your house.

I prefer Apple chips: using Lavash package as a vessel just blow burn wood chip smoke into bag until bag becomes inflated. Wait until smoke dissipates and or if choose repeat until you reach your preference of smoke flavor in your lavash.

Most high quality vegan cheeses melts nicely and stretch: for best results always layer vegan cheese on top of sauce adding remaining ingredients creating a Thermo layer for cheese to become gooey. 90% of people I serve vegan cheese rarely mention a difference when Thermo melting.

I prefer Simply Truth or Gardein's Frozen Breakfast Sausages. Any vegan pepperoni will work.

Vegan choice of cooking is eating live food much as possible; meaning never over-cook ingredients, just heat it through until cheese melts. Veggies should remain crunchy for best nutritional value.
