Durum Semolina Sourdough w/ Buckwheat

材料・調味料
125g bread flour
125g durum Semolina flour
160g filtered water
6g sea salt
75g 100% hydration sourdough starter
30g olive oil (EVO)
35g buckwheat

Cover and ferment for about 4 hours with stretch & fold every 1 hour.
Proof, covered, for 2.5~3 hours.
Preheat the oven to 250C. Once the loaf is in the oven, reduce the temperature to 230C. Bake for 35 minutes.
