Umê plums (washed)
300-400g
white liquor/whiskey
500-600mL
sweetener* (choice)
200-300g
tea bag** (optional)

vinegar** (optional)

Lightly wash plums, take off remaining stem and soak in water overnight (or at least 1-2hrs) to release any sodium hydroxide.

Allow to air dry or hand dry and freeze to break down the fibres when making syrup. When making liqueur or vinegar concentrate, continue to next step without freezing.

Spray jar with sanitizer & put in plums first. Next add sugar, honey, maple syrup or other sweetener. *May also choose between preference of white, brown, sugarcane or other sweeteners.

Add alcohol of choice and ensure plums are covered. Or don’t use any alcohol to make syrup.
**Vinegar may replace alcohol to make a non-alcoholic concentrate.

**Add tea bag of choice for enhanced flavour. Be sure to take bag out after a week or so.

Keep in a dry & dark pantry and ensure to mix gently to ensure sugars blend in.

Let alcohol sit for at least a few months. Flavour will enhance with time and change from immature liqueur to a smoother crisp taste.
If no alcohol or only vinegar is used, may be ready within a few weeks to a month.

Enjoy over ice, with any mixer (suggest soda or sparkling water), squeeze a twist of citrus fruit or blend with iced tea, yogurt or even make a float.

Can also use syrup as marinade for chicken, pork or game as well as in baking muffins, cakes or banana bread.
ポイント

May keep for up to 10 years with alcohol, but be sure to blend regularly and start with dry plums and a clean jar.
