prepare the dry rubs:
mix salt, black pepper, cayenne pepper, provence herbs.

clean and dry the pork with kitchen towel. marinade with dry rubs. refrigerate for at least 3 hours. and remember to take out from the fridge 30 mins before cooking.

prepare the vegetables:

peel, halved and quartered the potato into equal pieces
cut tomato into thin round slices
cut green onion 1 inch length

arrange the vegetables in the baking dish.
top with the basil leaves and sprinkle rosemary, little salt and pepper.

preheat oven to 175C. heat skillet medium fire.
pour the olive on the skillet, then the garlic, then put in the pork.
brown the pork each side around 45 seconds. take out the garlic as soon as its browned and put on top of mixed vegetable in baking dish. arrange the browned pork on top of the mixed vegetables. last, pour the rest of oil in the skillet on top, then put in the oven for 35 mins.

when the cooking time ends, take out from the oven and let rest for 15 mins. then serve. enjoy the savoury roast pork!
ポイント

For the hot fiery tounges effect, feel free to level up the cayenne pepper.

Always remember to leave the pork in room temperature before cooking at least 30 mins.
