Can't get through the hot summer heat without an ice cold gazpacho.I have made red,yellow and white gazpacho here,now it's this years green version.Made with melon,cucumber,lime,champagne vinegar,lime,white pepper,mint,olive oil,served with yogurt.
Very happy you like this Makiko San.Of course red one s most common,but I want to be more adventurous and share some new ideas with my SD friends!I actually had this in mind a few month ago and I finally made it,it's even better than what I expected,refreshing and well balanced.There are too many types of vinegar,so I could only stock for a few good ones,I found this Spanish champagne vinegar is the best all rounder for lighter colour food,I use it in many things,please try it with yours too!Very simple to make ,and these are all the ingredients you need,let me know if you have any question.This must be even better with Japanese melon!
Too true! I also can't live summer without cold tasty soup... I love cucumber gazpacho,but I've never seen melon's one! I learned good things from the comment that you wrote for Makiko San.Thanks great idea😊🙏
You are welcome!Always love to share!This works well,our melon is a little vague in the flavour,it got lost a little,but still enough to know it's there.Please try it and tell me how it's like with the flavour exploding Japanese melon,but you might need to balance it well with cucumber,I trust that you know your stuff!

I am so glad you and Makiko San like this idea!Sorry I did not give any measurement,because the sweetness of fruit is different here,but I could trust experienced cook like you too could adjust the balance correctly.The melons in Japan are much more aromatic from the ones I get here,I am sure your gazpacho tastes much better than mine,you lucky people😊!
