Take a big bowl and add the flour, salt, vanilla sugar, squirl. Take a little pan and heat the butter, add the warm water and milk and let all warm on body temperature.
In a little bowl put the half germ cube and add the sugar a little warm water and stir.
Then put a little hole in the flour mix and add slowly while whisking the fluid germ, the egg yellows and the milk/water mix.
Then all should be a warm and elastic dough.
If ready add a little flour on top of it and cover the the dough in the bowl with a clean towel. let the dough sleep 30-45 min.
Now roll out the dough about 1cm high and cut out round rings with a big glass (outter ring) and a little glass (inner ring).
You can also make mini donuts 😊.
Then lay the rings on a baking tray laid out with baking paper. If you are finished, let them sleep again for 10-15 min.
Prepare the frying pan and the trays with kitchen paper towel for later.
The fryer or frying pan should be about 160-170°.
Do 3-4 donuts a time, they have only a little time. count on 40 -50 seconds then swap, and again for same time. They should souffle, and be a little brown. If you are not sure, make a test donut before doing more pieces.
After frying, let them dry on kitchen papers.
Melt chocolate in a little pan on a water bath on low temperature to decorate the donuts.
Then decorate them while still the glaze is warm.
