Summer pudding

Mixed summer fruit
800g
Sugar
About 25g

White bread at least a day old

Remove crusts from bread. Cut a round from one slice of bread to fit in the base of a 1.2l cup round open proof bowl and place in position. Cut strips of bread about 5cm wide and use to line the sides of the bowl, overlapping the strips as you work.

Gently heat the fruits, sugar and water in a large heavy pan, shaking the pan occasionally, until the juices begin to run.

Reserve about 45ml fruits juice, then spoon the fruits and remaining juice into the prepared bowl, taking care not to dislodge the bread lining.
Cut the remaining bread to fit entirely over the fruits. Stand the bowl on a plate and cover with a saucer or small plate that will just fit inside the top of the bowl. Place a heavy weight on top of the plate. Chill the pudding and the reserved fruits juice overnight in the fridge.

Run a knife carefully around the inside of the bowl rim, invert the pudding on to a cold plate. Pour over the reserved juice, making sure that all the bread is completely covered and serve.
ポイント

Use a good mix of summer fruits for this pudding. Summer pudding freezes very well so make some extra to enjoy another time.
