Marinated the ribs in light soy sauce for 30 minutes. Heat oil in wok to medium-high heat, and fry the ribs till golden.
Use another pot to fry ginger and spring onions till fragrant. Add in cooking wine, star anis, cinnamon and the light soy sauce from the remaining marinade. Add 2 cups of water and bring to boil. Add in pork ribs. Cook on low heat for 1.5 hours.
Add in dark soy sauce and rock sugar. Continue to cook for 30 minutes. when the meat is very tender and the liquid is reduced, add 1 tsp of sesame oil, and scoop up the ribs. Stir fry some leavy vegetables to go with the ribs.
