Good morning Usakame!Wonderful!Poolish is good for any type of bread,even 食パン,it's little more work,but it makes tastier bread and keeps better for longer time! Seems like you really enjoy it,and I think you have mastered the proportions of poolish! I am sometimes amazed too,my bread tastes no different after 4-5 days,but after that,usually gone... Because of long fermentation,it means also midnight baking for me too,my neighbor told me once she couldn't sleep because of the aroma😬😂! And this is such a cute shape,like mushroom,looks so soft and fluffy! Anyway,thank you for the report,I don't get tired of looking at your bread at all!
Thank you for your reply! Happy to know you are making lots of delicious bread,we have a nice place here so we could share cooking tips,there are many great bakers around,I still have a lot to learn! Good idea,that would be wonderful if we could live near,I could taste many of Usakame's delicious food too! I will resume cooking in November,let's talk again!
