In a pot add 150h of sugar and 2tbsp water and caramelized sugar; after the sugar become brownish, add 1tbsp lemon juice and 150ml water and let the sugar melt. Then leave it to cool down.

Separate the eggs, and making merengue; mix egg white with a pinch of salt until it becomes hard foam then add 120g sugar and mix it, then add yolks, baking powder, vanilla essence, semolina, 100g melted butter, flour and the sugar syrup.

Divided the mixture into 2baking trays and bake them at 180C for 15-20min at preheated oven.

In a pot, caramelize 200g sugar; when the sugar is melted , add orange juice, apples and corn starch +cinnamon (mix them with 2-3tbsp cold water) and boil it until it becomes thicker.

In a bowl, mix 200g soften butter, cream cheese and dulce de leche; then mix it together with apple sauce.

Bake the pie sheet at 200C for 10min at preheated oven.

Assemble the cake by putting 1 layer of sponge, 1 layer of cream and on the top of the cake (cream layer should be the top layer), add crumble pie sheet.

Keep the cake in the fridge minimum 6hours.
