Pumpkin soup (w carrot)

材料・調味料 (4 人分)
Onion

Garlic
4 cloves
Butternut pumpkin

Carrot

Water
3 cups
Curry paste
2 tbspn
Coconut milk
1 can
作り方

Dice onion and garlic, put in pot on high, mix in curry paste

Deseed and dice pumpkin and carrot, add to pot, mix.

Add 3ish cups of boiling water until soft.

Put on low and mix in coconut milk, stir occasionally until ready

Add salt and pepper to taste
ポイント

Add coconut milk to taste.
Change curry taste to suit personal preference (I like Tandoori or Thai red curry - great to add coriander to!)
You can roast/steam veggies prior to putting in soup if in a hurry.
